Hemp Veggie Burgers

So honestly when we were making some of these hemp themed recipes, we weren’t sure how well they would turn out. We were pleasantly surprised with how well these came out. We’d make these again even if there wasn’t a hemp theme to the day! We got a couple recipes for some veggies patties and then improvised heavily to get the following –

Ingredients: 

2 eggs
1/2 teaspoon salt
1.5 cups cooked quinoa
2 cups shredded carrots
1 cup finely chopped kale

Hummus

Ingredients:
1 16 oz can of chickpeas or garbanzo beans
1/4 cup liquid from can of chickpeas
3-5 tablespoons lemon juice (depending on taste)
1 1/2 tablespoons tahini
2 cloves garlic, crushed
1 teaspoon salt
2+ tablespoons olive oil

Asparagus Soup

Straight from Nourishing Traditions. The best soup we’ve tried from that cookbook!

Ingredients:

2 medium onions
3 tablespoons butter
6 cups chicken stock
4 red potatoes, quartered
2 bunches asparagus, chopped into 1/4 inch pieces
2 cloves garlic, minced

Mindless Monday: Spinach Frittata

Our newest idea: Mindless Monday! What’s deal with that? Well… we’ll be the first to admit that some of our recipes are a little time consuming. So we thought we’d highlight some of the easier, quicker, less time-intensive options. This also means that the recipes are open to interpretation. Think of Monday recipes like the Pirate Code “they’re more like guidelines.”

Saute the spinach and onions in an oven proof pan until spinach is wilted and onions are translucent
Whisk the eggs (8) together with some milk (1/2 cup), salt and pepper
Add sun-dried tomatoes, and chopped up sausage to the spinach in the pan, if you want
Pour the egg mixture over all of it
Pick up the spinach with your spatula to let the egg seep under
Cook on medium until egg is about half way done
Layer on as much goat cheese as you want (or not!) 
Pop into the preheated oven (400F) for about 15 minutes
Done when the egg is cooked through!

Lemon Garlic Salmon

Marinade:

Olive oil, lemon juice, lemon rind, freshly minced garlic, sea salt and pepper

Mix about 1 cup of olive oil, with the juice and freshly grated rind of two lemons
Whisk in the garlic (2-4 cloves), salt and pepper
Pour over salmon to marinate for 10 – 15 minutes
Bake @ 450 for 7-10 minutes

 

Pâté

Pâté finger sandwiches are a super easy addition to any tea party! You can simply buy pâté at your local store, or if yo’re feeling ambitious (and not squeamish) bust out your food processor and make your own!

Ingredients:

1lb chicken livers
1 small lemon, zested and juiced
1 medium onion
6 cloves garlic
6 strips bacon
2 teaspoons fresh thyme
2 tablespoons fresh parsley
1/2 teaspoon apple cider vinegar
1/8 teaspoon red pepper flakes
sea salt to taste

Beef Larp

This is a modified version (meaning we took out the crazy ingredients that are hard to find in the states) of the traditional dish that that Tami made at a cooking class in Laos. It can be made with chicken, fish, tofu or pork.

Ingredients:

1 pound of ground beef
2 tables spoons beef stock
1 medium lime or lemon
bean sprouts
1 bunch green onions
2 shallots
2 cloves garlic
1 bunch fresh coriander (or cilantro), finely chopped
2 stalks of lemongrass, thinly sliced (white part only)
salt
1 teaspoon chili powder
1/4 teaspoon fish sauce

Edamame Cheese Salad

We already love edamame, so adding cheese can only be a good thing! Found and followed the recipe from FoodNetwork.

Ingredients:

2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
2 teaspoons finely chopped fresh rosemary leaves
2 cups (9 ounces) shelled edamame beans
1 (15-ounce) can cannellini beans, drained and rinsed
5 ounces pecorino, cut into 1/2-inch chunks
1/4 cup chopped fresh flat-leaf parsley
1/4 teaspoon kosher salt

1 4lb leg of lamb with bone removed
5 cloves of garlic
1/4 cup of chopped rosemary plus 4 twigs of rosemary
5 tbsp olive oil
2/3 cup chicken broth

1 1/2 pounds beef sirloin steak (1/2 inch thick)
8 ounces fresh mushrooms sliced (2 1/2 cups)

1/2 teaspoon salt

Indian-Style Lamb Chops

This recipe was inspired by the recipe of the same name in Nourishing Traditions, we just didn’t quite have all the same ingredients, but we went with it anyway.

Ingredients:

2 pounds lamb, cut into 3/4 inch pieces
1 cup yogurt
1 teaspoon cumin
1 teaspoon coriander
4 tablespoons clarified butter
1 medium onion
2-3 cups beef stock
2 cloves garlic, minced
1/2 teaspoon saffron threads (soaked in two tablespoons water)
1 tablespoon freshly grated ginger
1/4 teaspoon ground turmeric
juice of 2 lemons
1/4 cup cilantro, chopped

Pizza Margherita

Straight from the most recent Bon Appetit! We used Trader Joes out of the bag whole wheat dough… probably should have rolled it a bit thinner, but it’s so sticky!

Ingredients:

1 13.8-ounce tube refrigerated pizza dough
1 tablespoon extra-virgin olive oil
1 12-ounce bag cherry tomatoes, stemmed
1 garlic clove, pressed
1/2 teaspoon fennel seeds, coarsely crushed in plastic bag
1/4 teaspoon dried crushed red pepper
2 4-ounce balls fresh mozzarella in water
1/3 cup chopped fresh basil leaves plus small leaves for garnish

Julia Child’s French Onion Soup

Ingredients:

2 tablespoons butter
1/4 cup olive oil
3 lbs onions, halved and sliced thin
2 cloves garlic, minced very fine
1 teaspoon granulated sugar
2 cups red wine
6 cups beef stock
salt and freshly ground black pepper
12 toasted slices of French baguettes, 1/2 inch thick
1 cup swiss cheese, grated
3 cups parmesan cheese, grated

Split Pea Soup

Want to know the (not-so) secret ingredient? Bacon! Seriously… best split pea soup we’ve ever had!

3 cups water
1 large garlic clove, minced
2 slices bacon
1 stem celery
1 teaspoon salt
1/2 teaspoon celery flakes

Lamb Burgers

A yummy variation on your standard hamburger. Taken straight from the allrecipes.com site, but we used sprouted buns instead of pita bread.

Ingredients:

1 pound ground lamb
2 tablespoons chopped fresh mint leaves
2 tablespoons chopped fresh cilantro
2 tablespoons chopped fresh oregano
1 tablespoon garlic, chopped
1 teaspoon sherry
1 teaspoon white wine vinegar
1 teaspoon molasses
1 teaspoon ground cumin
1/4 teaspoon ground allspice
1/2 teaspoon red pepper flakes
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 ounces feta cheese, crumbled

Mac & Cheese

This recipe came from the Macaroni & Cheese cookbook, which is pretty hilarious because the only requirements are literally that the recipe contain macaroni AND cheese. So recipes like Truffled Timbales with Zucchini Pesto, Lemon-Scented Pasta Pudding and Tuna Noodle Casserole are in this book because they have… you guessed it… both cheese and macaroni! We’ll be trying out a couple more recipes, especially a couple of the baked versions.

This recipe is SUPER easy and SUPER quick. You can literally prep everything in the time it take for your pot was water to come to a boil.

Ingredients:

12 ounces smallish macaroni (elbows or pennette)
2 cloves chopped garlic (we minced 4 cloves)
1 shallot, chopped
(we clearly used a red onion)
10-12 ounces shredded Gruyere, Emmenthal or Appenzeller
(we used about 16 ounces total of all three!)
4 ounces of creme fraiche (we used heavy whipping cream)
A grating of nutmeg
Salt and pepper to taste
2 – 3 tablespoons butter

Butternut (or any other Squash) Soup

We found this recipe at Wise Food Ways, but found it too bland initially so we added in our own little concoction of garlic and rosemary to give it a little more oomph! Other variations could include pumpkin, or any other squash you have on hand.

Ingredients:

2 tablespoons olive oil
2-3 leeks, sliced into rounds
1 butternut squash (seeded, baked four about an hour, peeled and cut into chunks)
1 bouquet garni (an herb bundle tied with string) including any or all of the following:
a bay leaf, a sprig of thyme, a sprig of sage, a sprig of parsley, a rosemary stem
Chicken stock
1 cup yogurt, buttermilk, half-and-half, or whole milk (or 3/4 cup cream or crème fraiche)
Salt and pepper to taste
Optional: minced garlic and chopped fresh rosemary

Esalen Smoked Salmon Spanakopita

Another Esalen success! This recipe turned out so well we literally sat around the table talking about how good it was, while we were eating it. Yeah. It’s that good! (Thanks for taking pictures Laurie!)

2 pounds fresh spinach (or 2 frozen packages) stemmed and chopped

Peter’s Minestrone Soup

Monday is Peter’s night to cook, so he used up all the vegetables in the fridge to make his “world-famous” (his words) Minestrone Soup! You can use whatever ratio of veggies you happen to have on hand, or use our list of ingredients below as a general guideline. The main key is to cook all the vegetables individually. That and add lots of tomatoes. Oh, and don’t forget to season and taste as you go along!

Ingredients:

4 sticks of celery
4 carrots
Bunch of broccoli
A handful of green beans
1 can of white beans
1 onion
4 cloves of garlic
4 cups of chicken stock (to start)
1 can of tomato paste
3 blanched tomatoes
4 chopped and crushed tomatoes
2 cups of pasta
2 tablespoons of chopped parsley
2 tablespoons of chopped fresh oregano & 1 teaspoon dried oregano
Salt & Pepper to taste

Poblano White Chili & Rajas

We found this recipe on www.vegetariantimes.com, but for the life of us we can’t get back to it or find it again.

Ingredients:

3 cups cooked white beans OR 2 cans white beans, drained and rinsed
1 recipe rajas
2 cups stock (vegetarian or chicken)
2 tablespoons dried oregano
1 teaspoon ground cumin
1 cup fresh (or frozen) corn kernels
1/2 cup chopped cilantro

Meatloaf

We found the original recipe on Epicurious and liked everything except the prunes and bacon, so we left those ingredients out! Serve with Mashed Potatoes & Green Beans!

Pesto

This recipe is a conglomerate of a bunch of different recipes! By using walnuts instead of pine nuts, you get a very earthy-tasting pesto. The flavor goes great with whole wheat pasta and sun-dried tomatoes! Or spread on a sandwich with some fresh mozzarella, tomatoes and prosciutto!

Ingredients:

2 cups fresh basil
3 garlic cloves (minced)
1/4 cup walnuts (finely chopped)
1/2 cup shredded cheese (your choice: parmesan, pecorino romano or asiago are all good choices)
1/2 cup (or more) olive oil

Kebab Ingredients:
