Hemp Oatmeal Cookies

In celebration of International Hemp Day which was on 4/21 I got together with my friend from grad school that happens to be an expert hemp enthusiast and made some hemp-tastic food! We thought the cookies turned out particularly well! So well that we had to make another batch the same day because the first batch made too few cookies!

Honey Spiced Brussel Sprouts

These days, being in grad school, I need things that are fast an easy that I can make while soon other things. In an attempt to make cooking brussel sprouts easier and also copy some of the best brussel sprouts I’ve ever had from Michael’s On Main in Capitola I came up with this ridiculously easy method.

Ingredients

Brussel Sprouts
2 tablespoons olive oil
Salt and pepper
2 tablespoons of butter
2 tablespoons of honey
1 teaspoon of cinnamon
handful of roasted pecans

Instructions

Preheat oven to 400 F
Chop the brussel spouts into quarters, making sure to remove the bottoms
Coat the brussel sprouts with olive oil and then season with salt and pepper
Bake for 20-30 minutes total, stirring half way through
Meanwhile, melt the butter, honey and cinnamon in a sauce pan 
Once the brussel sprouts are done cooking, pour the honey butter over them
Top with chopped up pecans
Enjoy!

Caramelized Brown Sugar Pumpkin Pancakes

Whipped up some pumpkin pancakes (if you don’t want to make them from scratch, TJ’s has a decent box mix) cooked them normally on the first side but before I flipped them, I sprinkled a fine layer of brown sugar over the dough. Once flipped, they cooked up nice and sticky! A perfectly indulgent Sunday morning breakfast!

Asparagus Soup

Pumpkin Cinnamon Rolls

Root Beer Float Cookies

 

This is what happens when someone super awesome has a birthday and mentions that he likes root beer…. a cookie is born!

2 cups dark brown sugar

2 tsp. root beer extract

Nourishing Traditions Waffles

Straight from the Nourishing Traditions Cookbook, these waffles are very dense and moist, making them perfect for freezing and reheating. The original recipe called for 4 tablespoons of maple syrup, but we decided to leave that out.

Indian-Style Lamb Chops

This recipe was inspired by the recipe of the same name in Nourishing Traditions, we just didn’t quite have all the same ingredients, but we went with it anyway.

Ingredients:

2 pounds lamb, cut into 3/4 inch pieces
1 cup yogurt
1 teaspoon cumin
1 teaspoon coriander
4 tablespoons clarified butter
1 medium onion
2-3 cups beef stock

Killer Cheesecake

We got the inspiration for this cheesecake from the Killer Bars! Mmmm… so decadent!

Crust Ingredients:

Two packages of graham crackers
1 stick melted butter

Cheesecake Ingredient:

8 ounces 70% chocolate
3 (8-ounce) packages cream cheese, room temperature
1 cup sugar
1/4 cup unsweetened cocoa powder
3 large eggs

8 ounces butterscotch chips
1/2 can sweetened condensed milk
1/2 cup shredded coconut

Currant Scones & Molasses Frosting

We started from this recipe on epicurious, added some cinnamon and then made up our own molasses frosting! Yum!

Ingredients:

2 cups all-purpose flour
1/3 cup sugar OR sucanat
1 teaspoon baking powder

Halibut Cabbage Rolls

A little intensive on the prep the first time you  do it, but so worth the effort. Great, savory taste… we all sat around raving while we were eating!

Lemon Cheesecake

We’ve been super obsessed with lemons recently, so Tami made up this fresh dessert! Top with strawberries and chocolate sauce for an uber-decedant treat! Cut back on the amount of lemon juice for a more subtle flavor!

Esalen Banana Coconut Bread

Straight from the Esalen Cookbook. Healthy, moist, sweet (but not too sweet) and yummy! Perfect straight out of the oven, just cool enough to handle with butter melted over it!
