Ingredients:
2 cups luke warm water
1/3 cup sourdough starter
1 1/4 cups unbleached bread flour
3 cups semolina flour
1 teaspoon salt
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
Instructions:
In a large bowl whisk the water and sourdough starter
Whisk the bread flour in and let sit in a warm spot for 10 minutes
Stir in the semolina flour and salt and then knead for 8 minutes
Knead the seeds into the bread and cover with a kitchen towel
Let the dough sit in a warm spot for 6-12 hours
Lightly flour your work surface and knead dough for 2 minutes
Form dough into desired shape and leave to raise for another 2-3 hours
The dough should more than double in size
Score the bread
Bake in preheated oven at 350F for 50 minutes
The bread is done when it reaches 190F OR
When you tap the bottom with your fingers it should sound hollow
Let the bread cool on a wire rack for as long as you can stand it before enjoying!
