Root Beer Float Cookies

 

This is what happens when someone super awesome has a birthday and mentions that he likes root beer…. a cookie is born!

Cookie Ingredients:

1 cup butter
2 cups dark brown sugar
2 eggs
2 tsp. root beer extract
3 1/2 cups flour
1 tsp. baking soda

Root Beer OR Vanilla frosting:

1/2 cup butter
1.5 cups powdered sugar
1 tsp. root beer OR vanilla extract

Instructions:

In a mixer, cream together butter, sugar and eggs
Add in the baking soda and root beer extract
Mix in the flour a cup at a time until the dough is your preferred consistency
If you have time chill in the fridge for an hour
If you don’t have time (or the patience) just make the batter thicker by adding a bit more flour
Bake at 350F for 8 minutes
While cooling whip the frosting ingredients together
Choose either root beer extract (for a super-duper root beer experience) or vanilla (for a classic root beer float taste)
Frost once the cookies have cooled
