The most time consuming part of these cookies is unwrapping all the Andes Mints. SO worth the effort though!
Ingredients:
1 cups butter
2 cups flour
1 tsp. baking soda
1 cups granulated sugar
1 cups brown sugar
2.5 cups blended oatmeal
.5 tsp. salt
8 oz. Andes Mints, unwrapped and chopped into chuncks
2 eggs
1 tsp. baking powder
1 tsp. vanilla
Instructions:
Cream the butter and both sugars together in mixer
Add eggs and vanilla
Mix together in flour, oatmeal, salt, baking powder, and baking soda
Add Andes Mints
Roll into balls and place two inches apart on a cookie sheet
Bake for 10 minutes at 375 degrees
